External organization-wide defaults can be set more restrictively than internal defaults, and partner users gain access to records they own or that are shared with them through sharing rules or the partner role hierarchy.
I would design page layouts and profiles for partners, test access thoroughly with sample partner users, and review licensing costs with the client before committing.
What interviewers look for
Look for Experience Cloud, external sharing model and license awareness. Strong answers address testing with real partner personas. A pitfall is giving partners internal user licenses or sharing credentials.
